Mauritius is a small island in the Indian Ocean and you will be forgiven for not noticing it on the map, with a population of 1.2 million consisting of French, Indians, Chinese and Africans. Mauritius was founded by the Dutch and was subsequently taken over by the French, later the British took over and populated the Island. Mauritius is known as Paradise Island. Mauritius is a melting pot of different cultures and ethnicity and this is reflected in their food. Many of the dishes have been fused to create some amazing culinary delights.
